Quality meets authenticity
Unlike many other wood-fired pizza franchises, MidiCi The Neapolitan Pizza Company sources only the most fresh, natural, and high-quality ingredients to produce a pizza like no other. We adhere to stringent gastronomic rules to deliver an authentic Neapolitan pizza with a chewy, crisp dough topped with all-natural ingredients and baked in under two minutes. Our pizzas remain true to the Neapolitan heritage with the use of a special dough comprised of only four fine ingredients: non-GMO double-zero flour imported from Naples, sea salt, live yeast, and pure water. Guests enjoy authentic ingredients such as mozzarella di bufala (also known as “white gold” for its superior taste), fresh whole mozzarella and organic, non-GMO, Italian extra-virgin cold-pressed olive oil.
Our pizza recipes and menu items were devised by a winning team of specialists that includes Peppe Miele, a Naples-born chef who recently headed Associazione Verace Pizza Napoletana in North America, a group that certifies the quality of Neapolitan pizza; Mario Vollera, an Italian chef known for the pizza bar Southend in Venice, California; and counseling chef Roberto Caporuscio, the U.S. president of the Associazione Pizzaiuoli Napoletani.
